Slow Cooker Split Pea and Sweet Potato Soup

To cook on a stove top,
1.Heat one tablespoon olive or vegetable oil in a large pot on medium heat.
2.Add onion, carrot, celery, and garlic. Sauté until vegetables begin to sweat, about 5 minutes.
3. Add sweet potato, split peas, sausage, broth, and spices.
4. Bring to a boil, then reduce heat and simmer until split peas are tender, about 40 minutes

Ingredients

1 medium onion, diced
4 medium carrots, sliced
4 stalks celery, sliced
4 cloves garlic, minced
2 medium sweet potatoes, peeled and cubed
3 cups yellow split peas, rinsed
4 ounces Kielbasa sausage
2 32-ounce cartons low-sodium chicken or vegetable broth
1 tablespoon curry powder
1 tablespoon cumin
1 teaspoon ground ginger

Directions

  1. In a slow cooker, add onions, carrots, celery, garlic, sweet potatoes, and split peas. Cover with broth. Add spices.
  2. Cook on high 4-6 hours until sweet potatoes are tender & soup reaches a thick consistency. If needed, cook an additional hour.
